The Short Story
I wanted a fall snack mix that actually stays crunchy. The answer was real pumpkin in the caramel—reduced first—then cooked to temp and oven-set so every piece dries into glassy little clusters. Think Pumpkin Spice Cheerios and Life Cinnamon pulling the flavor, Bats & Jacks pretzels bringing the salt, maple minis for soft pockets, apple chips for snap, and a shower of pepitas because… pumpkin. It’s party fuel, teacher-gift friendly, and totally “grab a handful on the way past the counter.” Save the recipe and you’re set for tailgates and movie nights all season. 🍎🥨🎃
What Makes It Work

Ingredients
- 2/3 cup pumpkin puree
- 4 cups Pumpkin Spice Cheerios
- 4 cups Life Cinnamon cereal
- 2 cups Utz Bats & Jacks pretzels, pick out the pumpkin shapes only
- 2 cups Maple mini marshmallows (stir in during last 10 minutes of bake)
- 1 cup Goldfish Pumpkin Spice Grahams, Or Dunkin also makes them
- 1 cup Kellogg's Frosted Mini-Wheats Pumpkin Pie Spice, lightly broken
- 1 cup Trader Joe's Pumpkin Cranberry Crisps, roughly broken
- 1 cup honey-roasted peanuts
- 1 cup toasted pumpkin seeds (pepitas)
- 1 cup dried apple chips (fold in after baking)
- 1/2 cup unsalted butter
- 1 cup packed dark brown sugar
- 1/3 cup light corn syrup
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon ground cinnamon
- 1 teaspoon fine sea salt
- 1 tablespoon powdered milk
- 1 teaspoon vanilla extract
- 1 teaspoon apple cider vinegar
- 1/4 teaspoon baking soda
Instructions
- Prep: Heat oven to 250°F. Line two rimmed sheet pans with parchment.
- Combine all dry mix ingredients except dried apple chips in a large roasting pan or bowl.
- In a small saucepan, simmer 2/3 cup plain pumpkin puree over medium heat, stirring, until it measures 1/3 cup (about 15 minutes). Cool slightly.
- Make caramel: In a saucepan, combine butter, brown sugar, corn syrup, reduced pumpkin, pumpkin pie spice, cinnamon, salt, and milk powder.
- Warm over medium heat, stirring until smooth. Bring to a steady boil; clip on a thermometer and cook without stirring to 225-240°F.
- Finish: Off heat, stir in vanilla and apple cider vinegar, then whisk in baking soda; the caramel will foam. Make a quick dash to your bowl with the dry ingredients.
- Coat: Immediately pour caramel over the dry mix and toss quickly but thoroughly with two spatulas until evenly glossy.
- Bake to set: Spread onto the sheet pans. Bake 60 minutes at 250°F, stirring every 15 minutes, until dry to the touch.
- In the last 10 minutes, sprinkle in the maple mini marshmallows, toss, and return to the oven.
- Cool & finish: Cool completely. Fold in dried apple chips. Break into clusters. Store airtight up to 1 week.
